1. Mango Sorbet

Ingredients:

  • 2 ripe mangoes, peeled and chopped
  • 120 ml water
  • 50 grams granulated sugar
  • 1 tablespoon lime juice

Directions:

  1. In a small saucepan, combine water and sugar over medium heat. Cook, stirring occasionally, until the sugar dissolves. Remove from heat and let it cool.
  2. In a blender, puree the chopped mangoes and lime juice until smooth.
  3. Add the cooled sugar syrup to the blender and blend until well combined.
  4. Pour the mixture into a container and freeze for at least 4 hours or until firm.
  5. Once frozen, take it out of the freezer and let it sit for 5 minutes before scooping.

2. Homemade Ice Pops

Ingredients

  • Any fruits of your choice
  • Optional – coconut milk, milk or yogurt for creamyness
  • Minimal honey if needed

Method

  • Grind or blend your fruits (and dairy if you choose to use any) into a puree.
  • Pour into any moulds or icetrays and freeze for 6-8 hours.
  • Enjoy!

3. Berry Ice Cream

Ingredients:

  • 2 ripe bananas, sliced and frozen
  • 75 grams strawberries and/or blueberries, fresh or frozen
  • 60 ml almond milk

Directions:

  1. In a blender or food processor, blend the frozen bananas, blueberries, and almond milk until smooth.
  2. Pour the mixture into a container and freeze for at least 4 hours or until firm.
  3. Once frozen, take it out of the freezer and let it sit for 5 minutes before scooping.

4. Green Tea Ice Cream

Ingredients:

  • 240 ml unsweetened almond milk
  • 2 teaspoons green tea powder
  • 60 ml honey
  • 1/2 teaspoon vanilla extract
  • 2 egg yolks

Directions:

  1. In a saucepan, heat the almond milk, green tea powder, honey, and vanilla extract over medium heat, stirring constantly until it comes to a simmer.
  2. In a separate bowl, whisk the egg yolks until they are light and frothy.
  3. Pour the hot almond milk mixture over the egg yolks, whisking constantly.
  4. Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens and coats the back of a spoon.
  5. Remove from heat and let it cool to room temperature.
  6. Once cooled, pour the mixture into a container and freeze for at least 4 hours or until firm.
  7. Once frozen, take it out of the freezer and let it sit for 5 minutes before scooping.

5. Chocolate Avocado Ice Cream

Ingredients:

  • 2 ripe bananas, sliced and frozen
  • 1 ripe avocado, peeled and pitted
  • 2 tablespoons unsweetened cocoa powder
  • 60 ml unsweetened almond milk

Directions:

  1. In a blender or food processor, blend the frozen bananas, avocado, cocoa powder, and almond milk until smooth.
  2. Pour the mixture into a container and freeze for at least 4 hours or until firm.
  3. Once frozen, take it out of the freezer and let it sit for 5 minutes before scooping.
