1. Egg Pizza
Ingredients (3 servings)
- 6 Eggs
- 1/2 Tsp Salt
- 1/2 Tsp Pepper
- 1 Tsp Grated garlic
- 2 Tsp Olive oil
- Tomato slice
- Chopped Coriander leaves
- 6 cubes Cheese
- Mixed herbs
- Italian seasoning
- Chili flakes
Instructions
- Crack open the eggs and add salt, pepper powder & finely chopped garlic. Whisk well and keep aside.
- Cut the tomatoes into slices with medium thickness. Keep aside.
- Heat a pan with olive oil.
- Drop some egg mixture and let it heat on low flame.
- Place the tomato slices on egg mixture and sprinkle some mixed herbs, chili flakes and pour egg mixture again over the tomato slices.
- Sprinkle some chopped coriander and close the pan. Cook for a few minutes.
- After the omelette fluffs up, grate the cheese all over and sprinkle some Italian seasoning, chili flakes and close the pan again. Cook for 2-3 mins.
- Turn off the stove. Cut it into slices.
- Tasty Egg Pizza is ready to be served.
2. Karandi Omelette (Tamil)
Ingredients:
- Chopped Onions
- Chopped Green Chili
- Chopped Coriander leaves
- Chili powder
- Turmeric powder
- Pepper
- Salt
- 1 Egg
- Oil
Instructions
- First, add the chopped onions to a large mixing bowl.
- Add the chopped green chilies and coriander leaves.
- Now, add the chili powder, turmeric powder, pepper powder and salt to the bowl.
- Mix all the ingredients together.
- Now, crack open an egg and add it to the bowl.
- Whisk it quickly.
- Now, take a tempering spatula to make the karandi omelete.
- Once the karandi is hot, add a little oil.
- Pour the egg mixture into the karandi (spatula).
- Keep it on a low flame and cook it.
- Once it is cooked on one side, flip it gently to the other side.
- Cook evenly on both sides and then remove it carefully from the karandi.
3. Spinach Feta Omelette
Ingredients:
- 1 Tsp Oil
- 1 Chopped Garlic
- 1 Sliced Onion
- 1/2 Chopped Green Chili
- Spinach Leaves
- Salt
- Crushed Pepper
- 2 Eggs
- 1 Tbsp Water
- 25g Feta Cheese
Instructions
- Heat oil in a pan. Add garlic, onion and green chili. Saute them.
- Meanwhile, wash and pat dry the spinach leaves.
- Once onions turn transparent, add spinach leaves and cook on low flame.
- Add salt and pepper and saute them well.
- In a bowl, take eggs, add salt, pepper, water and whisk nicely.
- Take a pan, add oil. Pour the egg mixture evenly.
- Over the egg, add the spinach mixture.
- Keep the low flame and gently flip on the other side.
- Flip it again and turn off the stove.
- Top with 25g crumbled feta cheese
4. Frittata
Ingredients (3 servings)
- 6 Eggs
- 1 Tbsp Milk
- 1 Tbsp Butter
- Garlic
- 1 Chopped Onion
- Green Capsicum
- Red Capsicum
- Mushroom
- 1 Tbsp Italian Seasoning (optional)
- 1 Tsp Chili flakes
- Mozzarella cheese
- Salt
- Pepper
Instructions
- In a large bowl, crack open the eggs.
- Add salt, pepper, milk and whisk the eggs.
- Add 1 tbsp of butter in a pan, garlic, onion and saute the.
- Add green capsicum, red capsicum, mushrooms, salt, pepper, Italian seasoning, chili flakes.
- Saute the vegetables.
- Once the vegetables are cooked, pour the whisked eggs.
- Grate mozzarella cheese on top of it.
- Close and cook till it is done.
- Slide it on to a plate and serve it hot.
5. Oats Omelette (2 servings)
Ingredients
- 3 Tsp Rolled Oats
- 1 Tbsp Milk
- 4 Eggs
- 2 Tsp Chopped Onion
- 1 Tsp Chopped Green Chili
- 1 Tsp Chopped Capsicum
- 2 Tsp Chopped Carrot
- Salt
- Pepper
- Olive Oil
Instructions
- Soak some oats with some milk and let it sit.
- In a bowl, crack open eggs and season them with some salt and pepper.
- Add some chopped onions, green chilies, capsicums, carrots, tomatoes, coriander leaves and the soaked oats.
- Whisk everything together.
- Heat a pan with some oil and pour in the omelette mixture.
- After the omelette is cooked on one side, flip it to the other side and cook evenly on both sides.
- This omelette serves two.
6. Chicken Omelette (2 servings)
Ingredients:
- 4 Eggs
- Shredded (leftover) chicken pieces
- 1/4 cup Onions
- 1 Chopped Green chili
- Turmeric powder – a pinch
- 1/2 Tsp Chili powder
- Salt
- Few chopped coriander leaves
- 2 Tsp Oil
Instructions
- In a bowl, add the onions, green chili, turmeric powder, chili powder and salt.
- Now break the eggs and add to it. Beat well.
- Add chopped coriander leaves and beat well.
- Heat a pan with little oil. Pour the beaten egg & onion mix.
- Reduce flame. Close and cook till half done.
- Shred the (Leftover) chicken pieces and add on the omelette.
- Close and cook till its done.
- Gently press the chicken on to the omelette. Flip and cook for few seconds. Turn off. Done!
